For centuries, the traditional cheese trade has been re-enacted on the Markt in Gouda, where merchants strike a price for Gouda cheese through the traditional 'handjeklap' hand-clapping ritual. Since the 1980s the market has been kept alive with the help of volunteers as living heritage, and only takes place during the season.
